Does anyone know how to change the volume of the on-hold music? It is blaring on our system. Also, is there a way to adjust the volume on incoming calls? Both sides have issues hearing each other.

Turn your music source down! If adjusting the volume control does not help, CO line volume can be adjusted but requires installer level access.
