Just curious, with everyone riding the cloud who has priority? Voice, Data, Video or Access Control? How long will the infrastructure hold up in terms of available bandwith?

Unless a preference has been made in programming (and that's usually on an INTRA-Net) then NO ONE has priority.
It's all just packets of data and first come, first served with random distribution of packets across the network.

On a private/managed network, voice should have priority over video which should have priority over data. Data will be fine with a packet or two missing/being resent. Not so with video or voice. Some networks will make management protocols the highest priority, but that rarely generates enough traffic to disrupt anything else.
However, once it leaves your network to get out to the Internet, its a crap shoot.
